Recently, my father has been struggling with gluten intolerance, which often made me acutely aware of the limitations that come with dietary restrictions. I vividly remember the many dinners where we would prepare two versions of the same meal: one for him and one for the rest of us. Watching him navigate a world filled with gluten-laden options made me realize how challenging it can be to find delicious alternatives.

It sparked a passion in me—a belief that everyone deserves to enjoy great food, regardless of dietary needs. I often thought, "Why should gluten-free be the option on the side? It should be the main attraction!" Inspired by my father’s experience, I set out to create a bakery where gluten-free options are not just an afterthought, but the centerpiece.
